Chocolarder Chocolate Ribs

Method

  1. Melt butter in a 4-qt. saucepan over medium-high heat.
  2. Add garlic and onions. Cook until soft for 4–6 minutes.
  3. Stir in Chocolarder chocolate, ketchup, sugar, coffee, honey, vinegar, cocoa, Worcestershire sauce, mustard, chilli powder, salt, pepper, coriander, and cayenne.
  4. Cook for about 3 minutes, stirring occasionally, until thickened.
  5. Slather over your barbecue ribs or store in the fridge, in an airtight container, for up to 1 week.

  • 2 tbsp. unsalted butter
  • 2 cloves garlic, minced
  • 1 small yellow onion, minced
  • 30g Chocolarder, Dominican Republic Dark Chocolate, chopped
  • 1 ½ cups ketchup
  • ⅓ cup packed brown sugar
  • ¼ cup brewed coffee
  • 2 tbsp. honey
  • 2 tbsp. cider vinegar
  • 2 tbsp. unsweetened cocoa powder
  • 1 tbsp. Worcestershire sauce
  • 2 tsp. dry mustard
  • 2 tsp. chilli powder
  • 2 tsp. kosher salt
  • 1 tsp. ground black pepper
  • ½ tsp. ground coriander
  • ¼ tsp. cayenne
