A recent delivery of Moonchild craft beer to the studio inspired this recipe! We reckon that the fresh notes of orange and coriander in this wheat beer make it the perfect accompaniment for a light noodle dish. This recipe is also vegan & gluten free!

With this recipe we suggest cooking your rice noodles as per pack instructions. Cook your vegetables either boiling for 5-10 mins then flash frying in a pan along with the chilli, garlic and ginger or simply stir fry altogether in a pan. Adding the cashews a couple of minutes before taking off the heat.
Dish up the noodles, piling your veg on top and adding a garnish of coriander and spring onions. Add a generous dash of soy sauce and a squeeze of lime!
